Recipes Please!

Hey everybody...we are in need of some fresh recipes. We are looking for quick, tasty, HEALTHY, affordable meals (not asking for too much, right?!?!). If your family has a favorite or two to share we would be really appreciative. You can just leave me a comment or, since many of my family and friends can't figure out the comment thing, you can email the recipe to me at: cmbberry@yahoo.com. I am going to post the recipes as we try them and then maybe we can all get some fresh ideas! Thanks in advance for playing along and sharing your ideas!!!

Have you ever made the Pampered Chef~Taco ring...really easy and really good...It is so quick and I always make 2 because the boys eat it all! They love it!
I can't find the rec. but it's pretty simple, here's the just...
2 pks. of cresent rolls
1 lb. ground beef~add taco seasoning.
1cup cheese(your fav)~don't use moz.
after meat is cooked stir in cheese until melted together.
(I use my PC pizza stone for this one)...
arrange cresent rolls in a cicular form with the small ends on the outside, to form a thick inside circle. place taco meet on cresent rolls middle creating a ring of taco meet on top. bring small outside ends over top of taco meet to inside of circle(when you are finished it looks like a circle with the meat inside). I usually top it with cheese so that it melts in when it bakes...bake at 350 until golden brown serve with all the usual taco topings!

I actually haven't had that before, but I will definitely try it. We LOVE anything "taco" around here!! I'll post when we try it and let you know how it went over!

I'm catching up on my Michelle-reading! I have a great recipe! It's so simple and so good, my 3 year old will eat it!

Chicken Stir-Fry

3 skinless Chicken breasts cut into strips
1/2 (of each) red, yellow, and green peppers cut into strips
Carrots cut into strips
3 stalks Bok Choy chopped (THIS IS LOADED WITH VITAMINS AND FIBER!)
2 cups frozen peas
3 cups white rice (I hate brown rice, but you can use it or wild rice instead too)
Minced garlic
Stir fry sauce

Cook your chicken in olive oil and as much garlic as you can stand
(we LOVE garlic!) when chicken is done, add a little stir fry sauce and coat chicken, empty skillet into a big bowl, then add veggies. cook til slightly softened, yet still crisp. Put carrots in first thing, they take a long time.
Make rice and then toss all together in big bowl.

This meal is requested like clockwork every week on Wednesday at our house by Libbie. She will not eat veggies unless they are with chicken and rice. I never get sick of this meal! I could eat it for every meal of the day everyday! I do Weight Watchers and 1 cup of skinless chicken strips, plus all the veggies and 1 cup rice only equals 6 points! Sometimes I can't finish it all!

Jamie-that is definitely going on my list! It sounds soo good! I have never had bok choy, so that could make it a fun adventure. Yeah, Brock can really get down on anything "garlic" so he will definitely be into this! Thanks, I'll share how it goes when I try it!
